Matcha production process
Matcha is the stone-ground green tea powder made from shade-grown tea.
The tea leaves are covered with straw mats for four weeks before harvest, which encourages the plant to produce more chlorophyll and amino acids. The more amino acids the leaves contain, the brighter the green color and the sweeter the tea.
The leaves are hand-picked, then steamed and dried. Afterward, the stems and veins are removed. The resulting material, called tencha, is finally stone-ground into matcha powder.
Preparing Matcha for Latte PURE
