Production process
Matcha is the stone-ground green tea powder made from shade-grown tea.
The tea leaves are covered with straw mats for four weeks before harvest, which encourages the plant to produce more chlorophyll and amino acids. The more amino acids the leaves contain, the brighter the green color and the healthier the tea.
The leaves are hand-picked, then steamed and dried. Afterward, the stems and veins are removed. The resulting material, called tencha, is finally stone-ground into matcha powder.

The better the quality of matcha, the higher the content of antioxidants, amino acids, and other nutrients. When you consume matcha, you drink the green part of the leaf, which contains all those nutrients. This is in contrast to regular green tea, where you remove the tea leaves before drinking.

Preparation of matcha

Half-fill a matcha bowl with hot water and insert your matcha whisk. This will soften the bowl, creating a more attractive foam when frothing. The bowl will warm up, preventing the prepared matcha from cooling down too quickly. After 1 minute, empty the bowl and dry it thoroughly.

Using a bamboo spoon, add the right amount of matcha to the bowl and make a paste with a little water and the whisk

Fill the bowl with 60-90 ml of water at 80 C°

Use the bamboo whisk to make W-shaped motions, avoiding the sides and bottom. These motions are performed with your wrist. Stop when a nice layer of foam forms on top of the matcha. The fewer bubbles in the foam, the better the result.
